Soybeans remain Missouri’s largest cash crop. Did you know soybean acreage in Missouri outnumbers corn, wheat, rice, potatoes, tomatoes and other major crops combined?
Common crops demonstrated at the farm include:
- Soybeans

- Sorghum (milo)
- Oats
- Alfalfa
- Cotton
Alternative Crops
As a part of the Jefferson Institute’s mission to explore and promote value-added opportunities for farm operations, the demonstration fields include alternative crops. All the alternative crops demonstrated can be grown in Missouri. Hybrids of the Missouri native sunflower are the only native field crop grown in the state.
Alternative crops demonstrated include:
- Sunflowers
- Buckwheat
- Dry edible beans
- Millet
- Cowpeas
- Amaranth
- Canola
- Flax
